Uhhh the Hoth system was already mapped though, the probe droids weren't doing cartography.

it landed to find the hidden underground base, not to find out where the orbital tracks where

then again the droid didn't look equipped for astrography

yeah i think it's fair to say we haven't seen probe droids that are equipped as rapid mapping would require

i mean that guy was a dude with a gun and some cameras, not very useful beyond 'there is a star here' unless he used his real sensors to decide the planet was interesting enough to land on

it'd be pretty lucky if it just happened to descend right next to the rebel base after all

New Jedi Order. Mon Cal shoots a ship from the outer reaches of the Coruscant system to pull off a superweapon hoax. Then it got included in the ICS, with a max distance of between Pluto's aphelion and perihelion. It's not something they regularly pull off in combat, but on the other hand they do engage at 1000km+ ranges according to RoTJ.

It wasn't even necessairly looking for an underground base, remember it found the shield generator on the surface. It probably had just enough ability to pop into a system, scan it, and then go down to check if there was anything interesting. A planetary shield generator stands out on a world that is supposed to be uninhabited and the technology on the droid was probably just sophisticated enough to detect that before heading in for a look.

I think the probe droids as depicted in ESB aren't capable of the navigation it would take to completely map a new galaxy. I think Star Wars has artificial intelligences and droids capable, but not the ones depicted in ESB and it is possible that the Empire does not have the droids necessary to do so (nor do they have a need for them). Using Separatist designs and/or technology they could probably come up with something, but it wouldn't be probe droid spam that's for sure. Navigating new routes in hyperspace is supposed to be quite difficult, which is why it took a very long time for the SW galaxy to become as interconnected as depicted.
