Kanye's music is a thing of elaborate beauty. When I listen to it, I like to go back to some DJ Kool Herc or even Run DMC and just realise just how much more work goes into all the little layers of detail and tweaking in a Kanye track.
That said, I'd love to know how much of that is actually him v a legion of writers, techs and engineers.

The production is mostly him, though he co produces a lot of tracks these days. You have to remember he got his start as a producer. Heart of the City on Jay-Z's Blueprint was all Kanye production. The same sound went into his first album, and he's been changing things bit by bit since.
I am pretty sure he gets people to write verses for him, tho, especially in the beginning. He might be full enough of himself now to think he can write his own verses; it would explain half the shit he says on Watch the Throne.
There's one track he did with Q-Tip on WTT, That's My Bitch, which has such a good beat but pretty awful verses on top. I wish it would get remixed by someone that can actually rap.

I work in a kitchen in a workers' club. We get about 6-700 people through a night. Since before I came along, this has been handled by three kitchenhands. One of us puts the dishes in the machine, another takes them out to put them in their place, and a third assists the chefs by making salads and such. The work night ends at eleven, and sometimes we can finish up to twenty minutes early.
The new executive chef has decided that the profits of the bistro aren't sufficient, despite the fact we're only there so people will play the pokies after their meal and thus make us millions. Now we're down to two kitchenhands for the night. Every one has had their hours cut drastically, leading to the sous chef having to deal with angry support staff. Now unless the most experienced and capable people are on, nobody can finish before 11. A month or two ago, myself and another kitchenhand had to do a shift by ourselves because guy #3 called in suck half an hour before the night started, we only got out on time because a bunch of chefs stayed back to do about half an hour's worth of our jobs.
I anticipate six weeks more before this policy goes balls up somehow.

Did you hear about kanye's charity? It spent $500k and NONE of it went to actual charity works. It was used to cover the pay of staff members and stuff. That's pretty funny.

I work in a hotel where the bar and the restaurant are basically there to ensure the star rating. Functions are what actually make F&B profitable, but due to various factors the last few months have been lean on events, and the executive chef has just quit citing lifestyle change. Because we're talking about a restaurant that does all of fifty covers on a moderately busy night and always has four chefs on. They do a lot more in room service, but the margins on that are even thinner because of the staffing requirement.
In other words, Functions carries F&B, and Accom(my sector) carries the entire business.

Part of the reason I like Kanye and Lady Gaga is because they're both talented people who initially spent years writing and producing songs that made other people famous, before becoming successful in their own right.
